It all depends on the quality of the "Old" poles  . . . . ..  The ones around here are very dried out and open grained with very little structural strength when pulled out of service (hence, that is why the power company is replacing them - very little strength left). Best use with them is to try and saw a couple 2x6 or 2x4's out of each. Otherwise, look at how your older buildings are built and copy. New poles could be used like new structural columns, if your building code allows . . . .



That is something to consider. The 'old' poles are likely from old growth trees, stronger and slower to rot than tree farm trees. Also back then, they used better treatment, as well. I don't know about where you are, but 'here' if you use old utility poles you need to sign a waiver of liability stating you are at your own risk using the old poles.
If I were wanting to build my own pole shed today, I would start with concrete RR ties on the bottom. Bury them good and solid, and then attach the poles to them above ground level. The ties have attachment points for the rails already on them, and they are anchored into them very well. Around here a 8-1.2 foot concrete tie costs about $10, and they weigh from 600#-800# depending on which ties you get. The 'light' ones have 16 rebars going through them, the 'heavy' ones have 21.
