I took a roast one Sunday morning and smoked it for an hour, then seared it over very hot mesquite. Then dumped it in the instant pot while we went to church. I think 40min pressure is what I did. If you just sear and throw the roast in I go 55-65 depending on size.

Wife says that one is the best I’ve ever done. We honestly cut a lot of roasts into fajita meat or street taco meat. Pains me but wife and kids aren’t big roast fans.
