Different people have slightly differnt definitions.

One definition is that if the product comes from an animal it is carnivore. So dairy products are in as well as fish and seafood. Nothing from plant sources although even there some exceptions are made by some in the way of spices (to flavor the meat).

There are not exactly absolute rules. And it depends on what a person is trying to accomplish might make a difference on what is included or excluded. For example if a person is trying to resolve various autoimmune disease problems it might be best to only include beef and water. This would be the most strict elimination diet. Yet a person in good health and weight might go off a meat only diet once in a while for a meal or something and yet still consider themselves carnivore if 98% of the time all they eat is meat or animal products.

I consider myself an omnivore as I do eat some plant products. For example I had guacamole tonight which is made of avocado. Yet mostly what I eat for nutrition is meat. Probably 90-95% either meat or other animal products such as cheese.

I don't see there being any hard and fast rules. It just depends on what a person eating does the best for their health and is something they can appreciate and live with. I have an occasional beer or glass of wine but it dang sure is not for good health. And definitely not carnivore or even keto.
