I have rolled rye with a double rolling basket, also a McFarlane reel disk with disk cranked up so as not to cut the stems. But the rye was headed out. 80% or more died as the stems break at the base. I'm not organic so I sprayed reduced rate of RU and some 24d to kill some clover. It makes a nice mat to suppress weeds which I think would be helpful to the organic grower. I'm not sure how you'll handle the clover.
